Im back…. with breakfast

Sorry for the break but it was much needed on my part. I hope you are well!

I have so much I want to share with you, salad-wise and vegetarian-wise so let’s get right to it. This morning I had the biggest craving for pancakes. I am such a porridge girl when it comes to breakfast, but hey, the heart wants what it wants.

I give you; Peanut Butter and Cinnamon Pancakes. No recipe used, it was completely off the top of my head and i’m pretty happy with what I achieved. Also this recipe is dairy-free, egg-free and sugar-free so I’m thinking it will be less bad for my health than regular pancakes (here’s hoping).

– 1 cup of flour

– 1 cup of soy milk

– 2 table spoons of crunchy peanut butter (I use Mayvers Peanut butter – no additives and preservatives!)*

– A good dash of cinnamon*

– A good dash of nutmeg*

– 1 teaspoon of vanilla essence*

This is enough batter for four small pancakes or two large ones. I fried mine in rice bran oil.

*You can alter these measurements as much as you want depending on your preferences. e.g. I like peanut butter so I put a lot in. But if you prefer vanilla, put more vanilla in and less peanut butter. Ya know?

I have topped mine with strawberries and maple syrup but again, you really can do whatever you want.

I have a lot of spare time at the moment so I’m planning on blogging more. I have so many delicious meals to share with you.

Deluxe green

For anyone keen to know about the picture I use for all of my social media accounts, yes I did make it. This is one of my more elaborate creations. I call it Deluxe Green as it’s a bit fancier than a Simple Green.

– rocket leaves

– chopped red onion

– avocado mash

– salt and pepper

You don’t really need to add dressing to this one as the red onion and salt & pepper bring quite a lot of flavour. However if you really like dressing I would suggest olive oil and balsamic.

 

I am feeling so much better today, whatever happened to me I am so thankful it gave up after 24 hours.

This is not a salad

No, this is not a salad but it was too delicious to not share. I woke up this morning feeling awful, at some point last night I came down with something. I thought if I got a good nights sleep I would feel better but no such luck. Finally at 5:00pm I felt ready to eat something and in the spirit of feeling sorry for myself I made a vegetable soup.

– chopped potato

– chopped pumpkin

– chopped beetroot

– chopped onion

– chopped garlic

– corn

– chopped broccoli

Simmer in salt-reduced vegetable stock until soft.

It may be all in my head but there is something about soup that makes me feel so much better when I’m feeling off. Thank you for humouring my soup that is not a salad, tomorrow we will be back to normal programming.

The roast

Tonight I roasted a tonne of veggies – my favourite! It’s not often I have the time to do a roast so I always make sure I do a lot of veggies to last me a while. Roast veggies are amazing both hot and cold. They also are so versatile in that they are great by themselves and in a salad.

Roast Veggie Salad

– Roast veggies (carrot, sweet potato, potato & pumpkin topped with olive oil, rosemary and chilli salt – in the oven for 15-20 minutes)

– broccoli

– sliced avocado

I am eating my first plate and anticipating my second as I write this.

Leftover salad

So it’s just coming on 1:30am and I am wide awake. Awesome. As whiny as that may sound I really struggle if I don’t get a solid eight hours. Though I also really struggle to shut off my brain hence here I am. Since I am awake I decided to make my lunch for work tomorrow and I have quite the creation to show you.

I’m going to call this Leftover Salad. I made vegetarian burritos for dinner tonight and have put all of my leftovers in together.

– leftover spicy rice (rice, onion, garlic, chilli, corn, cumin and salt cooked in rice bran oil)

– leftover romain lettuce

– leftover spinach

– leftover cherry tomatoes

To keep things interesting I also added

– sliced avocado

– sliced carrot

I feel like this is (hopefully) going to taste like a Zambreros Burrito Bowl?? I’m almost tempted to put salsa on it but I don’t think that would keep until lunchtime tomorrow. As for the other half of that avocado I am going to eat that right now. Have you ever put chilli salt on half of an avocado and eaten it with a spoon? I strongly suggest you do.

Veggie Mama

First things first, I did not make this meal. I wish I did. I have tried countless times to emulate what I see on this plate but I guess there is a trick I am missing somewhere. This is a plate from my favourite vegetarian restaurant in Perth, Veggie Mama. Located on Beaufort St in Mt Lawley. This was my stomping ground in 2012 and while I have had to move away from Mt Lawley I still make the drive up as often as I can to eat at Veggie Mama.

I mean I can’t even handle what I see here!! carrots, rice, kale, beetroot, cabbage, sprouts, tomatoes and that’s not even half of it!!! Veggie Mama is completely vegetarian with countless vegan options. Salads galore but also patties, filos, burgers and juices. I urge you to go, it is beyond worth it. The first day of winter

It is the first day of winter here in Perth and it’s sunny!! After a four month stint in Melbourne last year, I realised that I definitely took for granted the beautiful Perth weather (don’t get me wrong I LOVE Melbourne too). It is so good to be sitting in sunshine while not enduring 45 degree heat.

To celebrate I took my older and better behaved puppy to the park. I swear she is smiling at me!

Though in salad news, today I made a pear salad for lunch. This is the first time I have put this combination of ingredients together and it did not disappoint.

– spinach

– sliced pear

– sliced radish

– feta (optional)

– chopped walnuts

– Balsamic and olive oil for dressing (also tastes great with no dressing)

I have been eating walnuts a lot lately. I think it’s because they add a whole new texture to a meal while not interfering with other flavours. DO NOT BE AFRAID TO MIX FRUITS AND VEGGIES TOGETHER. I was so hesitant to add pear to salad for the longest time. As soon as I did I couldn’t believe I had waited so long. Fruit can add a nice sweet flavour and in this case the pear and feta really compliment each other.

Simple green

I find lunch to be the best meal to get some much needed veggies in. I know for myself, breakfast and dinner tends to be a bit “carby” with things like toast and rice so I see lunch as a great opportunity to keep the balance. I ALWAYS pack my lunch whether I am going to work or uni. Mainly because you can find yourself spending $10+ on a meal that you don’t really know the contents of. Here is what I packed today;

Simple green salad;

– spinach
– sliced radish
– sliced cherry tomatoes
– avocado mash
– topped with olive oil, pepper & chilli salt (if you can find this at the shops, get it – chilli salt is a life changer!)

I use olive oil as a dressing because it holds well in a container for an extended period of time. Plus a lot of pre-made dressings can be full of sugar and preservatives.

Breakfast salad

Here’s what I ate for breakfast this morning;

1 banana chopped
2 kiwis chopped
1 handful of walnuts chopped
Topped with maple syrup and cinnamon

I made this whilst making my packed lunch for work (post to come) and it was so quick and simple. Also it was delicious!! The perfect combination of sweet, crunchy and spicy. If I had more time I probably would’ve put this on top of vanilla, almond porridge – though it definitely held its own.

And so it begins…

Oh hey, welcome to The Saladmeister. My name is Shayna and I shall be your host. I am a Perth based spinach enthusiast with a love for salad. For real, if I could eat salad for every meal I would – sometimes I do! This all began four years ago when I decided to become a vegetarian. Unfortunately it is not healthy to have toast, tomato spaghetti and margherita pizza as your staple meals when you are a vegetarian, hence began my salad education. Along the way I have learned just how versatile the salad can be – there really are no rules! I am here to show you the likely and unlikely recipe ideas I have come across.
